Top Chef Canada’s Trevor Bird to open Fable restaurant this May

I took a peek inside Fable, the new restaurant by Top Chef Canada competitor Trevor Bird, which is set to open in Kitsilano in mid May. Trevor was happy to sit down and talk about this welcome addition to the Vancouver restaurant scene. He even shared some intel on Top Chef Canada Season 2. Of course, Trevor is sworn to secrecy over the Top Chef Season 2 winner.

It’s no surprise that Top Chef Canada, which premiered April 2011, swiftly became the top-rated series in Food Network Canada’s history. Season 2 launched March 12, 2012 and airs Monday evenings at 10pm. 7 of 13 episodes have shown so far. 8 of 16 chefs remain, including Trevor. I can’t help speculating that winners receive cash prizes and a new restaurant takes investment.

Refuel Closing March 24; Top Chef Canada’s Trevor Bird to Open ‘Fable’ in Its Place

If you keep up with the Vancouver restaurant scene, you’ve probably already heard this news: Campagnolo owners Tom Doughty and Robert Belcham have sold their first restaurant, Kitsilano’s Refuel, to Top Chef Canada Season 2 “cheftestant” Trevor Bird, who plans to open his first restaurant, to be named ‘Fable’, in its place.

If you haven’t been to Refuel—or had planned to visit any time after this month—I urge you to go their before they officially close their doors on March 24. In my full review of Refuel (from June 2010), I talk about how much I adore this neighbourhood place, how fabulous the food is, and, especially, how divine their fried chicken is. Seriously, Refuel’s is the best southern fried chicken I’ve had in Vancouver, ever, and I say that as the daughter of woman from Atlanta, Georgia, who grew up on southern cooking. If you even remotely like fried chicken, get to Refuel before March 24!

Local B.C. Chefs To Compete on Top Chef Canada Season 2

Top Chef Canada Season 2

Top Chef Canada was the highest rated program on The Food Network Canada, so it’s no surprise that the reality-show competition—where chefs battle it out to be named Top Chef Canada and win $100,000—will return for a second season on March 12, 2012.

The first Top Chef Canada winner was Vancouver’s own Dale MacKay, current owner of Ensemble Restaurant in downtown Vancouver. In Season 2, B.C. has four chefs in the running, including another Vancouver chef, Trevor Bird (originally from Montreal), who worked at Vancouver’s Shangri-La Hotel and now runs the catering company Trevor Bird Cooking.

Vancouver Chef in Spotlight on New Reality Series

If you’re from Vancouver, you know that food – diverse, fresh, delicious – is one of the city’s greatest assets. Now, a new reality TV show promises to showcase one of Vancouver’s preeminent culinary talents to the whole country.

Top Chef Canada, which is based on the popular U.S. Top Chef program, debuts April 11 at 10 p.m. on Food Network Canada. The program pits 16 of the country’s top chefs against one another in a season-long battle for $100,000 in cash and $30,000 in high-end kitchen equipment.

British Columbia has three representatives in the competition. There’s Clayton Beadle, chef de partie at Four Seasons in Whistler. There’s Jamie Hertz, who runs Fusion Bistro out in Nelson. And then there’s Vancouver’s own Dale Mackay, chef at the acclaimed (and now sadly closed) Lumiere restaurant.
