New Prohibition bar opens at Rosewood Hotel Georgia in Vancouver

The Rosewood Hotel Georgia is already known to foodies for Hawksworth Restaurant, and to tipplers for its 1927 Lobby Lounge. With its Feb. 12 launch date, the downtown Vancouver hotel is on its way to becoming known for another destination – Prohibition.

With its name, elegant decor and subterranean location, the new locale is meant to evoke an era of early-twentieth-century decadence. The 3,000-square-foot space also promises to deliver a shot in the arm to the city’s cocktail scene with lively creations both new and vintage.

The location is in the former home of the Chameleon, an electro-lounge that once was a homebase for the city’s DJ culture. In 2011, the Rosewood Group renovated the hotel, located at 801 W. Georgia St, which was then called the Hotel Georgia. Munge Leung, the Toronto-based design firm which spearheaded the hotel renovation, is behind the design of Prohibition.

The establishment takes advantage of its underground, windowless location. Upon entry (off Howe Street), visitors descend a staircase from street-level into the bar’s dark, sleek interior.

Inside, a ceiling clad in Macassar Ebony wood plays against the black stone bar, a custom-designed glass-and-metal chandelier and richly upholstered bar stools. Blue vinyl couches along the walls and in alcoves help create intimate spaces and offer a view of the action at the bar.

There, cocktail enthusiasts can choose from “bespoke” (the press release’s term) creations, which incorporate house-made bitters, as well as vintage drinks. The menu also features a selection of bubbly, wine, spirits and craft beers.

Food items include Northern Divine Caviar, Belgian Truffled Pate and Smoked Duck Poutine. All come courtesy of the hotel’s Executive Chef Ken Nakano. A stage area at the foot of the stairs hosts live music on a nightly basis.
