Pop-Up Fried Chicken Restaurant Coming to Vancouver

Have a craving for some Southern fried chicken in Vancouver? You’re in luck … at least for a couple of days this March.

Chicken Shack – a pop-up restaurant serving fried chicken and Southern-themed sides – will open its doors on East Vancouver’s Hastings Street for four days only, this March 5-March 8. The pop-up is the creation of the culinary team behind two East Van foodie fixtures: Big Lou’s Butcher Shop (known for its artisan meats) and the now closed but not forgotten Two Chefs and a Table.

This is actually the second pop-up appearance of the Chicken Shack, which had its first go-round back in 2013 (and was sold-out and swamped with finger-lickin’ patrons each night). The menu this time will feature two distinct varieties of fried chicken.

The first is a buttermilk fried chicken recipe, which earned a cult following (you can still see the rave reviews on Yelp) at Two Chefs and a Table, where it had been paired, in classic Southern style, with waffles.  The other option is Korean BBQ fried chicken, an Asian classic made with a popular bulgogi marinade sold at Big Lou’s.

All chicken, which is locally sourced and antibiotic free, will be brined for at least 12 hours for extra juiciness before being thrown in the skillet and fried to a golden brown. The birds will be paired with down-home sides – think coleslaw, mac and cheese and potato wedges – and complemented by Southern-style sweet tea (i.e. super-sugary iced tea, optionally spiked with bourbon), beer or wine.

The pop-up will be located in the heart of East Vancouver, near Hastings and Main Streets at 337 E. Hastings St. Dinner service will be offered each evening from March 5-March 8. Chicken Shack will be cash-only (no credit, debit or Bitcoin) so be sure to visit the ATM prior. If the restaurant’s last appearance in 2013 is any indication, reservations are strongly recommended.
