Big Lou’s Butcher Shop Now Open

Hello Big Lou, nice to “meat” you.

Big Lou’s is the brainchild of Two Chefs & A Table partners Karl Gregg and Allan Bosomworth. Ever since the cow-covered paper went up to seal the windows of the space on Gore & Powell many, many months ago, I have wondered what will turn up inside. The answer is a butcher shop. But not just any old butcher shop. Big Lou’s is Vancouver’s first nose-to-tail butcher shop and focuses on sustainable, local and fresh products. Regulars are already swinging by daily to pick up in-house butchered meat from local farms like Sloping Hills, Pemberton Meadows and Two Rivers. One thing I find really interesting is that alongside the description and prices, the origin of each cut of meat is also listed. So you can see exactly which region (and farm), your meat has come from! Big Lou’s also offers an ever-changing menu of house made fresh sausages, charcuterie, pates and stocks, gravies, demi-glaces, rubs and marinades.
